Sweetcorn & Courgette Fritters

2 Grated courgettes
1 Tin of drained sweetcorn
3 eggs
1/2 Cup of plain flour
75ml of Milk
1 tsp of Paprika
1 Finely chopped red onion
Add a good pinch of salt and pepper and mix well.

Whisk together and ladle into frying pan.
Simply cook them, flip them and eat them!

Finish with chopped spring onion and top with a perfectly runny poached egg!
