Garlic & lemon chicken with a courgette and pasta salad 

Shopping List


2 Chicken breasts or 6-8 chicken mini fillets

2 Whole courgettes

Feta Cheese

1 Lemon

1 Bunch of spring onions

1 Cup of pasta, gnocchi or rice

Chilli flakes

Fresh Basil

Garlic & lemon chicken with a courgette & pasta salad 


STEP 1 - On an oven tray and in foil smother chicken breasts (Veggie option of quorn fillets) with crushed Garlic and 1/2 a lemon juiced and then place the left over rind in with the foil wrapped chicken, season with salt and pepper and cover - put into a preheated oven at 180° for 15-20 minutes

STEP 2 - Put a cup full of pasta, gnocchi or rice into a pan with water and bring to the boil.

STEP 3 - In a separate bowl grate 2 courgettes, crumble in 1 full block of feta cheese and 1 bunch of chopped spring onions.

STEP 4 - Season with salt and pepper and using the other 1/2 of lemon squeeze the juice over the salad.

STEP 5 - Once your pasta or rice is boiled drain and add to your salad and mix - if you’re using gnocchi drain and add to your chicken and leave the foil open and bake for a further 5-10 minutes.


Serve the chicken on top of the salad, sprinkle with chilli flakes and either dried or fresh Basil.
